三、課程大綱 Course Outline (本課程大綱教師得依實際教學進度及學生學習情況進行調整)

■ 課程目標及內涵 (Course Objectives and Contents)
隨著全球對環境保護意識的提升，低碳永續管理已成為畜產品產業發展的關鍵。本課程將結合ESG（環境、社會與公司治理）概念與低碳管理策略，幫助學生了解如何在畜產品產業中實踐低碳與永續發展，並應對當前氣候變遷、能源危機與政治風險等挑戰。
課程將介紹ESG發展趨勢及其在畜產品產業中的應用，並探討如何透過永續報告書撰寫和資訊揭露來促進企業透明度，進一步理解台灣食品產業中的標竿企業如何整合ESG策略。學生將學習如何規劃並執行永續發展計劃，並掌握與低碳運營相關的關鍵概念，為未來進入畜產品產業打下堅實基礎。
另一方面，隨著巴黎氣候協定的生效，全球各國正積極尋求降低溫升的措施，致力於將全球氣溫增幅控制在1.5°C以內。課程將深入探討ISO 14064-1標準的改版及其對畜產品產業的影響，學習如何進行溫室氣體排放源識別、碳排放盤查與量化，並介紹碳足跡（Carbon Footprint）的相關議題。學生將學習如何進行碳排放優化與減碳策略設計，為未來在畜產品低碳管理領域的職業生涯奠定必要技能與應用。
